Hi all,
Where I work the ladies are always bringing in baked goods and trying to outshine each other with their domestic goddess prowesseseseses(sp?) and the last time I bought a (lopsided) baked product in it didn't go down to well (apparently chocolate and lemon don't go together as well as you'd think)
So anyways I have once again been challenged to bring in some wares on Monday, so I'm asking, nay begging, for your help, I don't need to beat them, I just don't want my cake sat there uneaten while the ladies snigger into their macarons.

It doesn't have to be a cake, indeed my first thought was cupcakes...please...help...

I will document the entire process in pictures and add it to the baking thread, no matter the outcome.

Add ground up kevlar to the sponge mix.

How about carrot cake?

This recipe is bullet proof:-

I add ground mixed spice, ginger and raisins.... but stick to the recipe and you cannot go wrong.

For the topping, I use:-

7 oz cream cheese
2 oz softened unsalted butter
2 oz sifted icing sugar
1 teaspoon vanilla essence

I then sprinkle chopped walnuts on top.

Dead simple and tastes fantastic - if you want to jazz it up a bit, put a handfull of crushed walnuts in the mix and once you've put it in the tin, lay some sliced walnuts along the middle line of tin.

Just make 2 round sponges and layer them one on top of each other with cream/strawberry jam and fresh strawberries in between the two sponges. Cover the top with a dusting of icing sugar or proper icing.

Sponge recipe

6oz Self raising flour (sifted)
6oz Soft Margarine
6oz Caster Sugar
3 Large eggs

Place all the ingredients in a bowl and mix until light and fluffy. Grease and flour a cake tin, add the cake mix and place in the oven at 180c for 25mins. Cool cake and decorate.

The old chalet girl favourite ... used to save my @rse when I wanted to get out to the slopes !

I second this. It is always my fail safe cake, I tend to add blueberries to mine - yum yum!

Farmhouse fruit cake, bullet proof, also very easy!

20 oz of mixed fruit and cherries
10 fluid oz of water or orange juice
8 oz butter/marg
8oz sugar- any colour will do

put this all in a pan and boil it, simmering for 20 minutes, leave to cool a bit

add 3 eggs, 10oz flour and a couple of teasp mixed spice, mix
if you are feeling adventurous,
zazz it up with a bit of brandy and orange peel and juice instead of the water

bake for a couple of hours in a slow oven

If you really want to impress, do your cupcakes and ice them as high as you dare and add lots of sprinkles all differnt colours- the mixture of colours will tempt them, and you can then watch them get icing and cream all over their taches

If it's wimmen - meringues with Elmlea whipped sandwiched in between and simply a drizzle of melted choc over the top.

It's healthier than cake but still slightly naughty (and dirt cheap)
