Bag of Waitrose 'continental salad' with a bunch of flat leaved parsley mixed in, and a few quartered cherry tomatoes scattered over. Job done.

This /\/\/\/\/\

With maybe some very finely sliced sweet red pepper sliced into it for colour, perhaps a few cherry/plum tomatoes.

And a decent dressing, good quality olive oil and balsamic vinegar will do.

Mine usually contains half fresh rocket mixed with mixed salad. Nice lumps of celery are also a nice texture contrast and works well with lasagne. Halved cherry tomatoes are also a good call.

Keep it simple. The oomph and flavour should be in the lasagne. Dressings or loads of ingredients are simply not necessary.

Just thought I'd share...
I hate the taste of rocket with a passion. It gives salad leaves a bad name. There, wanted to say that for years.
Lamb's lettuce, cress, baby spinach leaves and shredded raw beetroot. Now yer talkin! smile

+1. Also hate the way half the sandwich shops fill their produce with the stuff. Replace with iceberg IMO
