Squid.... what to do with it?

Usually I would trim it, clean it, then dust it in a flour mix with paprika, salt, pepper, etc...

Then throw it in the wok with a load of oil to quickly fry it... quite healthy(ish)!!

I want to do something different this time, so can anyone suggest something that doesnt turn it in to vulcanised rubber?

It is a starter too.

Please dont mention battered squid/squid rings as an alternative.

This sounds nice, ive never tried it though, just did a quick google for steamed squid.

Stuff 'em!

Make a stuffing of anything you like really and cook it up.

Stuff inside squid tubes and do your best to seal the ends with a cocktail stick.

Fry fast for a couple of minutes as you normally would so that it doesn't go rubbery.

Last time I did it I used chorizo, the chopped tentacles of the squid, tomato flesh diced up, garlic and a little breadcrumb to make it the right consistency.

BBQ it - serve with a chilli sauce and watercress salad.

If you overcook it though - it’ll be tough, rubbery and not very appetising!

Grill it for a warm salad. Cut the bodies in half, score with crisscrosses and throw on a searingly hot griddle/bbq for 45 seconds each side. Do the tentacles separately, giving these 1 minute 15 seconds each side. No longer.

Combine the grilled squid with some frazzled chorizo slices, steamed new potatoes, a couple of grilled cherry tomatoes, some rocket leaves and a lemon and olive oil dressing.

This is going on the menu for the weekend. Sounds delightful.

If it were winter I would suggest a squid, chorizo, smoked paprika, red wine and chickpea stew. deelish.

However as it's summer, how about chargilling on skewers on the barbie? I've done this a few times using sweet chilli sauce as a baste/marinade.

Or salt/garlic/chilli if you don't like it too sweet. Takes about 5 mins to cook per skewer.

Created some pics for anyone who is not sure what to do with squid.
cut open squid slipper and lay on its outside with the inside facing you,essential if you want the squid to roll up into little checkered rolls.score with a sharp knife cutting about 3/4 through the flesh as per photo,cut into handy sized pieces.have a boiling saucepan of water ready along with a bowl of iced water.boil squid for 1 minute and immediatly plunge into the iced water.tender squid every time.

Squid Salad

cook 2 or 3 squid slippers as per above.

take one birds nest of vermicelli noodles and cook in boiling water for a couple of minutes,plunge into ice cold water,drain.chop a bang of coriander up.cut a large carrot up into match sticks.cut a mango into 1cm cubes,toss the above together in a salad bowl.

Dressing

$ tbsp lime juice
50 gram sugar
8 garlic cloves mashed or finely chopped
10 red chillies chopped
4 tbsp Fish sauce

combine the above and stir until sugar has dissolved

spoon 4/5 tbsp over salad or to taste.spread a handful of toasted nuts(peanuts or cashew nuts)over salad and devour...

Thats a great guide to how to prep squid (although maybe starting from a whole one would be best for some!).

The other ways I like to cook squid are to lightly batter (cornflour and water, almost like a tempura batter) it and deep fry, then toss in a hot oily wok with chillies, salt, and garlic for a tasty starter.

Also makes a really good stir fry with black beans (NOT black bean sauce), garlic, soy, black rice vinegar, sugar, chilli, and a little fish stock. At the last minute add some spring onions and cornflour to thicken. serve with rice and steamed veg.
