recommend me a signature dish!

Don't know about 'difficult' - chefs are not rocket scientists. Awkward and time consuming is more like it for e.g. Heston. Sous-chefs help here.

Reason being some people can find certain levels of cooking easy, other terrifying. I've known people to believe creating something likes Eggs Bendict easy and complicated, same with Beef Wellington. I have friends who can create a fantastic Saltimbocca but cannot produce a risotto, same friends who can also cook to perfection a lemon sole but will struggle with producing a steak to order.
Do you have experience of/specialise in, meat, fish, veg, dessert?
1.Steak, seasoned with salt and pepper, cooked slightly less than you prefer.
2.Fry up some chopped fresh chillis, sliced mushrooms, onions.
Place 2 on top of 1 and place slices/pieces (cheese-dependent) of blue cheese on top.
Slam under the grill until cheese melted to taste.
Serve with gallons of Shiraz.
