How about something like a butternut squash risotto? This is just about my favourite vegetarin dish. Roast the squash and tomatoes with garlic. Make white wine stock. Fry onions and celery then add the roast veg. add the rice and keep adding stock as you would with any risotto. Serve with parmesan and finely chopped parsley.
ETA, Oops just noticed you asked for starter ideas.

^^^ This.There are some very nice vegetable dishes, but ruling out cheese as well just smacks of 'Royal Pain in the <finish it yourself>'. Don't, for God's sake, cook and eat something you don't even like just for her.
Bruschetta with tomatoes and garlic can be lovely, but the tomatoes need to be properly ripe, which is tough at short notice.
How about an asparagus tart? Almost seasonal, too.

There is still British asparagus in the shops. I don't pretend to know what form of wizardry or paganism they are using, though.Maybe the Hammer House of Horrors was on to something.
