Haven't made one for years,anyone got a recipe which they consider to be the best ?

It was my turn for Friday fika in the office. Fika is where Swedes sit down during the working day and have a chat, a coffee and cookies or cake. Friday we take it in turns to provide something.

This with cream went down a treat

I had a bit of a problem with the pastry,it was very difficult to roll out and kept on breaking and sticking to the pin even with plenty of flour.any ideas ? to cut a long story short its gone into the oven looking like that pie in American Pie but boy does it smell good ! i ground up the cininomon from bark and the smell was something else

I have been pursuaded to post a picture of my pie to show what went wrong,hopefully somebody can explain where i messed up

After magi mixing everything,firstly i noticed a cheesey smell,did i mix everything too much ? i pulled it all together which seemed to take along time.fridged it.when i tried to roll it out on a floured surface it kept on breaking so in the end i put it into the tin and hand moulded it to the tin.baked it off and filled it with apple.i rolled out a perfect pastry top which promptly stuck to the rolling surface.in the end i just scrapped it up and put it on top of the pie.you are propably wondering what the sugar coating is,well i forgot to put the last layer of sugar on the apple so deciding not to waste it,sprinkled it on top.ok so what went wrong ?

Dont know how you got a cheesy smell but you should of just rubbed your fat in by hand it only takes a few minutes to do properly. The reason your pastry fell to bits is because it was too dry when you rolled it and possibly you didnt have enough fat in it in the first place.

Did you work the pastry a bit once it was in a ball to make it smooth before you rolled it?

and did you chill the pastry before roling?

Cheesy? Something isn't right that's for sure.

I cheat and use chilled blocks of pastry, use loads of good quality baking apples and a handful or two of blackberrys and some honey instead of sugar for the filling, I dont cook the apple before hand either.

Or sultanas,cinnamin and honey with the apple is nice as well If you like that sort of thing.

I usually have mine with Ice cream when the pies really warm or with custard so I dont bother wasting my time with making Pastry for it.

I followed the instructions to the letter,pulled it all in till it was smooth and together,chilled it,didn't seem dry to me in my limited experience of making pastry.i can still smell the cheesey smell in the kitchen which is why i wondered if i had over mixed it.i should mention it ate very well,the pastry melted in the mouth.
