I usually keep some in a tub in the fridge to add to salads, bu thow long is best to keep it for? The use by date is around 4 weeks - my current block is just past it...

It tastes like polish - not sure if I like it or not, very strong - surely though being a blue cheese this doesn't matter?

I don't know which is more worrying: not knowing the difference between "best before" dates and safe food, or that you can make the comparison to it tasting like polish - or did you mean Polish (what?)?

It will be fine for probably a couple more weeks if remains refrigerated.
If you're not going to eat it that quickly, but would use it in a sauce in the future, why not freeze it?
I do.

Not familiar with Roquefort but like most cheeses I'd guess it'd taste better if you let it get to room temperature for an hour or two before eating it.

Loaf of crusty bread, packet or three of bacon, loads of butter, huge lump of Roquefort. Sandwich. Bottle of cheap red optional.

Dizeee, "use by" means just that and "best before" is a guide as to how long a product will remain at a reasonable quality, after which time you're using your own judgement.

Cheers D but I did know that smile

I just wondered what it was in terms of blue cheese. For eg a packet of rocket 2 days after use by is rancid, but often cheese can last longer if not improve...

Ah, sorry mate - a lot of people wouldn't be aware of the difference.

If it says 'use by' then I'd give it no more than 10% past the use by date, personally. When in doubt I usually employ the smell test but with cheese (particularly strong stuff) you'd need the nose of an expert to gauge it.

Dear Dizeee,

I gauge my cheeses' consumption suitability by the snail test:
Is it moving faster than a snail? No= eat, yes= bin,
