So, I've got my recipe for thai green curry perfect for our tastes. Prawns, sugar-snaps, baby corn, home-made curry paste (chillis, garlic, kaffir lime leaves, lime zest, lemongrass, ginger, sugar and fish sauce), coconut milk, lots of lime, lots of coriander cloud9

Want to try a red curry with beef and looking for a few suggestions:

What cut of beef? Fillet?
What veg to add (if any?) Fruit?
What's different in the paste? Just red chillis instead of green?

Not sure about the shop bought pastes as i would usually do my own but i would think it is just red chillis instead of green

I would use something with a little more flavour than fillet as it has to get over all the other flavours- maybe use skirt as it is cheap very flavourful and can be either cut thin and cooked quick or cooked longer if you want a more melting texture.

veg i would use fine green beans- they seem to go well with beef and thai currys.
