Does the camera have an option to take photos at a set interval? If so that will be the best place to start. In terms of stitching them together I use Virtualdub. Quite easy to use, needs a reasonable amount of power to be quick, but if you don't have it then just do it before bed and leave the PC/laptop chugging away overnight!
It is one of these http://www.dogcamsport.co.uk/astak-action-pro-helm...It can take photos a various intervals and what I want to do is set it going until the battery runs out then put them in some sort of software that will make the pictures more, like a fast slide show, which is how I imagine time lapse videos work.
