Does look tidy doesnt it, you are right, they do seem to be snapped up before the end of the auction period which is a good sign.
Absolute pain when that happens, I sympathise with you. As a regular seller on ebay I have to say that pillocks like that are very much the minority but they are certainly out there. It does sound like this might have been a try on. Absolutely no way I would part with anything of any value without seeing the money first.
One tip is to make it clear on your listing that you will insist on a non returnable deposit by paypal within 24 hours of sale or you will relist, I would ask £250 on a car. If they dont follow up or mess you about and delay then keep the deposit. I have done once and ebay backed me up. The main purpose of course is that it deters theft partly because they wouldnt want to pay a deposit and partly because paypal accounts are directly traceable. It is very much in your interests to demand that anybody bidding MUST have a paypal account to get that trace.
Get in contact with ebay, there is a provision within your sales listing to refer the matter to them as the buyer hasnt paid. They WILL record that against the account holder and if it happens 3 times (3 strikes rule!) they WILL remove that account completely. Seen it a couple of times and they have acted.
If they have evidence that the buyer may have tried to steal other cars by this method then ebay do have a dedicated team working with the Police to tackle fraud. I was involved in trapping one guy who they succeeded in arresting fraudulent selling of exercise rowing machines.
