Regional rust removal, repair, refurb and respray?

Hey folks, long time lurker.
I've got an E30 3-series which I'm too attached to for my own good. She's mechanically sound, but getting pulled to bits for a mechanical tidy up, refresh and further upgrades.
Which leaves the shell... Very solid, but a couple of problem spots - rotten lower boot pockets, acid rotted battery tray, corrosion on inner arch structure join, little hole in scuttle and a little scabbing along lower body and arches. Nothing catastrophic. I know these cars well and the typical rot hotspots are mostly clean!
I'm looking for a local place with a real eye for detail, quality workmanship and reasonable pricing to strip down as required to do proper repairs and a full respray in the same (metallic) colour. Ideally this will include rolling the thing over and cleaning/resealing the underside as a preventative measure.
Car will likely be partially stripped. I was going to drop both subframes to get on with my stuff while it's in the bodyshop, but a rolling shell will no doubt be more convenient to anyone but me!
Any ideas on good folks to approach?
