Cellulose paint information

Hey guys i have just purchased a project car that just needs a bit of work. I won't be able to get started on it until next year so I am doing all my research now. So I have a few questions regarding cellulose.

Which colour is the easiest to work with for a amature? I can't decide if I want a light colour car or a dark colour car, so ease of a good finish would be a factor.
The 3 colours I have been thinking about are white, black or gun metal grey.
