2007 Mini Cooper Fan on constantly

Hi,
About a month ago I had my car serviced and MOT'd. When i drove it away I noticed the fan came on, stayed on for the whole journey home, then wouldn't go off for 5-10 mins after I got back.
I went back the next day and he plugged his computer in and said he thinks the system had tripped when he reset the service interval, and that it would now be ok.
Everything was ok for a couple of weeks, even went on holiday to Cornwall in the baking heat of 26-30 degrees and it was ok.
Strangely it then came on on the way home from that holiday about half way home and stayed on, but it then went off immediately when i turned the engine off.
Everything has been ok since, but then at the weekend we went out for the day (about a 1 hour drive each way) and the fan came on as soon as I started the car and stayed on for the whole journey then stayed on for 10 mins after stopping and turning off the engine. I checked the coolant level and it was low. I then topped it up last night with the coolant and water. It didn't appear to have leaked by this morning but as soon as I started the engine the fan came on and stayed on til I got to work (about a 15 min drive) and stayed on for 5 mins. I checked the reservoir again and since driving it, the level had gone down.
Now, before I ring the local mini specialist I want to get an idea of what it may be? Any ideas would be greatly received!
