Solid/basic Parents Bike

It's been nearly 20 years since I last owned a bicycle, but with my 5-year-old now riding without stabilizers, we're looking forward to family bike rides soon.
I have limited knowledge, aside from hearing about various big-name brands like CUBE and Trek.
I've been researching and watching videos to find the best value for money and where to buy from. While I'm not keen on Halfords, the Voodoo Bizango has received excellent reviews. We also saw a CUBE AIM Pro in a local store, but the components don't seem quite as good.
We're looking to spend around £500, needing bikes for both my wife and me, totaling £1,000 plus or minus £200.
Any help or suggestions would be greatly appreciated as I'm struggling with zero knowledge.
