E60 M5 Tyres - Alternative to standard sizes

I need 4 new tyres for the standard wheels on a MY05 E60 M5. At the same time I'll be getting the alloys refurbed and powder coated.
Looking at tyre options, in standard sizes, tyres I know and like don't seem to be available.
Standard sizes being:
Front: 255/40/19 so 255÷40 = 102mm
Rear: 285/35/19 so 285÷35 = 99.75mm
I'm thinking (due to availability of tyres):
Front: 255/35/19 so 255÷35 = 89.25mm
Rear: 295/30/19 so 285÷35 =88.5mm
In the sizes I'm thinking I could get some Vredestein Ultrac Sessantas. I've had these on a different car and they were all round awesome IMO. I have AD08's on my Subaru which are also an option, and better in the dry, by the Verde's better for all year round.
This is the first time I'll be changing the tyres on the M5 and I don't want to ruin the ride.
What do people think? Stick with standard sizes? If so what brand? Or go with the Verde's.
