Vegetarian options for Xmas

Got a veggie for Xmas this year (makes a change from the Turkey... )

They are quite happy with a roast dinner minus the meat 'n gravy, but I'm trying to think of something to add to make it a bit more special. Nut roast seems a bit cliched.

Needs to be something that is easy to cook on the day (as with 10 to cook for and only a standard oven, things are going to be quite hectic) so something that can be prepped the day before and stuck in the fridge until required is a bonus

Curry: like the idea, but it won't go with the roast veggies (and yorkshire puds!) that she likes.

Field mushrooms sound good
Mushroom wellington, off to look for the recipe now!
