How do you butter your bread for sandwiches?

I had my mum over earlier and offered her lunch before she left. She wanted both slices of bread buttering for her sandwiches and said it was the normal way to make them! I've NEVER buttered both slices of bread and even when I was a child and she made my sandwiches for me I swear she only buttered one slice, but she says she has always buttered both.
So who's right? What's the proper way to make sandwiches?
My reason is that for me, butter is just a way of making the filling stick to the bread a bit better instead of falling out and doesn't solve any other purpose. Also, if both slices were buttered then the taste would overpower what was in the sandwich. It's also healthier to only butter one slice (has to be the bottom slice too!).
