I'm a big fan of spicy food, but SWMBO hates it. The answer? Encona West Indian hot pepper sauce smile It has a nice balance of flavour and kick, but I find myself wanted a bit more heat..... so, I tried a few more:

Bit dissapointed - some nice flavours in there (especially the peri peri) but not as spicy as I would have liked.

So.... what hot pepper sauces do you use / recommend? A balance of flavour and outright heat would be nice biggrin

Brilliant stuff all, plenty of ideas to try out... but not sure about anything with more than half a million scovilles yikes

Just out of interest, I had a quick look on the grocery section of Amazon, and discovered such delights as:

Rectum Ripper

Sphincter Shrinker

Colon Cleaner

And my personal favourite, Wet Fart

Not sure that they appeal to be honest hehe

Spicy sauces, chutneys, relishes etc can be fantastic and i have a ton of em... in my mind these are a marked separate thing to 'hot' sauces which taste of nothing and just add heat. The latter can often ruin a dish, I'm not really sure why they exist. I can eat as hot as can be cooked, its not the heat that is the issue it is the lack of taste. All this stupid naming ("mad dog", "TNT", "insanity" etc etc etc etc) seems to be tapping into some stupid macho aspect of the lazy male cook psyche. Must try harder.
I tend to agree - as stated, I like a balance of heat and flavour, but my tolerance has moved on so I need spicier sauces.

Saying that, my mate is bringing some Megadeath in tomorrow... no harm in trying biggrin

Had a tiny taste, first impressions are.... quite flavoursome actually. Impressed, despite the silly name.

I got mine from Tescos, and did not think much of it! Okay flavour but lacking in any heat whatsoever! I will concede that I may have burnt my taste buds off though hehe

Home made Sambal Trasi yum

200 g/7 oz red and green chilies
2 tsp sea salt
3 cloves garlic
1 tablespoon trasi (shrimp paste or 2 tbsp dried shrimp)

juice of 1 lemon or lime

Peel garlic and chop coarsely. Top and tail chillies and rinse. Add all the ingrdients to a blender and blend to a puree. Transer to a clean jar and store in the refigerator. Keeps for up to 3 months.
yikes

Does sound nice though...

Inspiring! I'm very tempted to make something similar. How much vinegar / salt / sugar did you put in?

This is my first PH post but it is my favourite subject......

I get all my sauces here - Pretty decent selection

Furthermore, the Tabasco Chipotle sauce can be gotten in Fortnum & Masons (I brought some in Mexico and it really is good stuff)
Welcome! What hot sauces do you normally buy from Hot-Headz?

Pretty much, yes.

Proper compost potting stuff and various techniques will help, but I've done it with a pot and saucer on the window sill.

Yeah they have 'best before' dates but we went well over on the Mega Death sauce and it was fine. There was a theory that it makes it less potent but that was bks, a good shake and it was back to it's best.

I really can't see any form of bacteria surviving in there!
