What tradesman do I need?

Have stripped a load of rank wallpaper from bathroom and kitchen and underneath it's a bit rutted and scored etc, I.e if I paint it now it will look st. Is it just a plasterer who will come and make the walls smooth and ready to paint without having to use wallpaper? I read the plastering thread and all the talk of plasterboard has made me wonder as these are old Victorian walls...
