how to remove this pesky bolt

too small for a tap and die and i really need to salvage the nut so what do it do??

the vice grip barely gets purchase on what is rapidly becoming a non existing thread

its for the seat for my new to me 748r so its high urgency as ive not ridden it yet!

diameter of the bolt is about 3mm!
