Best things to do in Tenerife?

Myself, the OH and the 2 kids (ages 5 & 3) are going to Tenerife (staying in Costa Adeje) next Friday for 10 days. Having never been, i'd like to know the best things to do while we are there. We will have a car, so travelling around isn't a problem.

I've looked online there but is so much choice - Loro Park, Siam Park, Jungle Park, Aqualand, Monkey Park, trip to the volcano, etc, etc.

What do you guys recommend? Also where is the best place to get tickets? Over here or while we are there? I also understand that you can get VIP tickets where you can feed the animals, swim with sea lions or dolphins, etc. Anyone does those and are they worth it?

Any tips on anything else (best beaches, restaurants, different customs, etc.) while i'm there will be gratefully received.

For the parks, where's the best place to get tickets? Online before we go over? From the holiday rep? From some ticket office over there? At the gate of the park?

Am i right in thinking that to get to the summit of Mount Teide, you need some kind of permit? Is that even if you are in the cable car or just if you are hiking up there?
