Best way to book last min for sunshine 1st week of Oct?

Last Monday of Sep we want to go away for a week somewhere hot with a beach. Budget is £500-800 each. Just want sun, sea and not much else.

Where should we go thats still hot then? Europe is ideal. And how do you book last min? Is it best to literally wait till a few days before? or later??? Or is it just as good a deal to sort out a couple of weeks prior??

dubai? but what about cost of staying there? food? etc - is it not a bit pricey? dont want to get a £700 deal then need to drop same again on eating out!
