Long weekend in January suggestions

Wife is 30 in January, I've been tasked with arranging a long weekend (Sat morning till Tuesday) somewhere. I've thought about Lisbon, but bit worried about what the weather might be like in January? Any other suggestions?
Ideally few hours flight from London airports, Eurostar also an option or would consider few hours drive from Essex within the UK. Paris, Budapest, Dublin and all of Italy have all been done recently so they're off the list!

BA holidays often do very good deals in January - I've been looking recently and you can get three days in a decent hotel for about £130 each flights included. Three nights at the Radisson Blu is under £200 each.
