Where would be the best place to "build" a scooby?

We have a 56 wrx hawkeye wagon which we like. Replacing it will be fun and whilst I'd like a gb270 its still a struggle to justify the cost to change. I've been through this before on here.
So it occurred to me that when the time came maybe I'd just take the car to a suitable place with a list of requirements and spend the money I would cost to chaneg the car to have it rebuilt.
I'm assuming corrosion won't be a issue except maybe brake/fuel pipes so it would "just" be a case of a retrim, engine mods (say 350bhp) and replacing old parts - brakes, suspension etc
I reckon a decent alcantara interior, good satnav, maybe a sunroof, heated seats, cruise should be enough. Subaru does all this on the Impreza except cruise and I'd imagine Legacy bits would work. SLs have a sunroof and heated seats (I think).
