subaru impreza over cooling

Got a subaru impreza mainly for trackdays but is my daily for. a month it has a bigger aluminum rad on when the fans kick in they stay in for a long time until the car temp is back down to cold was thinking of disconnecting one of the fans or covering half the rad with cardboard as a quick fix as have no time to investigate and coming hop to Christmas probably can't get parts Will this be ok? also found out there is two small holes drilled in the plate in the thermostat is that ok?
