E39 5 Series - Whats the best engine? MPG & Performance?

Evening All!
Having finally decided (partially) what model I will be going for next, I now need to decide what engine is going to be best.
Used to have a 520 and was surprisingly good on MPG, but also always felt like it just needed more poke.
So what would you guys say is the best engine in terms of MPG & performance? Or is there not much difference between the lot, and just go for a 530?
Any input would be great!
PS I dont have a great budget, so baring in mind which is the most reliable engine is also. WIll be spending £2k tops, then tinkering a little.
