Ultimate sub 2000cc endurance racer

Gents,
I have rather fallen in love with endurance racing.
Currently trying to gather thoughts for a build over winter for a competitive car.
Working on the assumption it'll be properly prepped for consistent 8 hour plus running can anyone give me some ideas?
Headline points:
Really looking for a minimum power/weight of 185bhp/t minimum, ideally 200+
Big enough to take massive fat 6'3'' drivers
Parts readily available
Is cool
The shortlist so far is:
Mk1 Mondeo touring car rep
Audi TT DTM rep
Alfa 155 BTCC rep
Can you hit me with some interesting options?
Petrol only, ideally n/a but blown 2000cc acceptable.

We're finding out all kinds of interesting stuff now, perhaps unsurprising for a bunch of novice endure racers!
The 'sub 2000cc' thing is part of the regs of the race that we just competed in - www.raceofremembrance.com
The reason for the 2 litre limit is primarily due to the cost of insurance. Once the cars get up over 2l the insurance premiums fly up. As it is a charity event the decision was maed to keep it sub 2000.
However, as a team we're now keen to do more. We have access to a race prepped Nissan 350Z that was run in Britcar last year. That's one option.
I think we'll probably end up doing 2 cars - 1 as a specific RoR weapon which is under 2000cc but goes as well as we can possibly make it go (no weight restrictions either!). Then we'll also prep the big boy racer for stuff like Britcar, Spa 6hrs etc.
