concerned that my temps aren't getting high enough; 70-75 water and only 60 oil
is this normal for this time of year? why don't thermostats keep it hotter?

If your water temperature is steady during normal driving I would assume you've got the lower temperature one fitted. If your water temperature is not steady it could be that the thermostat has failed open. My car has the lower temperature version and normally runs at around 75 degrees but obviously goes higher when the car is stationary or going slowly. On my car at this time of year my oil temperature struggles to get much above 60 degrees and takes a few miles to get there which means great restraint is needed with the engine revs you can use...
this is exactly what I find ,just have to be gentle lol
