Most fun/best handling - what bike 2k?

So hopefully in the not so distant I should have a two stroke 250 classic race bike to track and compete on.

My other bike(road): cb500 isn't cutting it anymore.

I want to swap the cb for something a bit more fun for the road. All out speed and power is not what I'm after. I want something to 'practise' on for the road. Something with decent handling and let's say atleast 60hp. I might track it now and again.

For back ground I ran a chr600 for a number of years. I'm kind of thinking of getting maybe a car600rr, 2003/4ish (appreciate this will double my budget).

Any suggestions for whatt might do the job? Vfr400? Zx4r? Cbr600? Race prepped cb500?!

Well there seems to be a lot of support for the vfr400. Tricky to pass on a 750 k1 for that type of cash though.
