Captain Paranoia is sitting very comfortably on my shoulder and saying "don't do it!" but I'm not sure this isn't some old wives tale carry forward from my mother. Beef, chicken, lamb - happy to reheat them - but pork?

maybe a little dodgy if its been sitting around unrefrigerated for a long time. Never done me any harm though!

Pork is so pumped full of stuff these days you could happily roll some around the garden and still have it slightly pink without issue.

As will all previously cooked meats you should thoroughly cook it through when reheating.

If it's already been properly cooked once then any cysts are dead. The issue with reheating is bacterial toxins, ie food poisoning.

The issue isn't really with reheating though. The issue is how long it's been since it was cooked, and if bacteria have had ample time to multiply. If you have some food in the fridge from the night before, if it's not dodgy, reheating it isn't going make it dodgy. But if it is dodgy, reheating it thoroughly might help kill bacteria off. It's always puzzled me how reheating in itself is thought to make stuff dodgier, when it's how long its been stood since cooked in the first place that is the issue.

You're right. 'Reheating' just implies that it's been left lying around for a while and is then going to be eaten.

Heat it to at least 85oC and you will be fine.
