I expect that to still work. Your £1 will get you an additional month of Ultimate after your 3 years ends. It should convert your 3yrs of Gold to GP Ultimate then instead of getting a further 3 months for your £1, you’ll just get 1 month extra.
Just to confirm this is working at the moment under Microsoft's holiday offer @ £1 for 3 months ultimate, even if you have had ultimate in the past.
My ultimate lapsed earlier in the year and I have only been on gold since, bought an extra 2 years gold (EU keys) to bring me to almost the 3 years, all converted to ultimate, next payment 2024!

My son is 14 but when I created his accounts years ago I gave his date of birth as being 18. He even has my credit card details stored on his Xbox. Parents know if they can trust their kids, thankfully I know I can.

I'm going to have to do that. I've googled how to do it but it's just a pain in the arse. Creating a new account didn't help, as the 3 years of subscriptions to Gold had already been applied. I ended up having to set myself an adult account up. Add her to the family. Then edit her account from child to unrestricted. I'd previously added a Credit Card to her account, so didn't need to do that. This allowed the £1 subscription to go through. It now shows as Ultimate until end of Feb 2024.
Cheers for the all the pointers! She's now downloading games like they won't be there tomorrow

Have just bought 3yrs of gold from cdkeys for £117 and converted it to ultimate for £1, next subs. due 10/24.

I did the Ultimate/Game Pass trick for my sons account and he uses a Series S, but I'll soon be having his S console for myself as I'e bought a Series X for him for Christmas.
Whats the best way of me doing this trick on the S console when I get it? Will I need to do any formatting of the console first, or will the fact that i'm setting up a new profile for myself automatically enable it to work? I assume Game Pass isn't registered to the console at all, just the user account?
