Mrs V. had Chinese on Tuesday whilst I was out poncing about. There was half a tub of Beef & Black Bean Sauce left. I didn't fancy rice as I'd had it 2 days in a row, so i thought how could I cook it? Chips? No. Beef & Pasta? Wrong but let's give it a go! Add a lonesome leftover frankfurter that was lurking at the back of the fridge:

Dinner last night courtesy of an old friend - Mr El Paso. Standard Taco Dinner Kit with the usual accompaniments - mince, salad, cheese, hot salsa and a few pickles to much on.
And the money shot before it exploded all over the plate:
Do love a dinner kit. Had 6 in the end, would have had more but we ran out of Salsa. Obviously on this thread as it was their standard corn tacos, none of that pretentious Stand n Stuff they're punting - and definitely none of that soft taco nonsense.

On a rare occasion I was home for dinner all weekend, something special was called for, and after a frugal brunch I was hungry. Enter stage left, an entire stuffed pork belly joint from the reduction aisle. This was sprinkled with a bit of black pepper, dried herbs, and then sealed in a foil pouch with a generous glug of red wine. I then wanged it in the oven for 90 minutes with a jacket potato, before serving with a can of mushy peas and a large knob of butter in the spud.
Result? Bloody tasty
Total cost of all ingredients? About £2.50
Try as I might, I couldn't quite finish all of the pork - however this was no bad thing, as the 3x3x3" sized chunk left over was flash-frozen and then revived out the following week, to accompany a "using-up" concoction of some reduced aisle samosas, half a carton of opened passata from a previous recipe, and a 1/4 bag of mixed salad. With the pork thoroughly reheated before being pulled over the rest of the dish, it was again extremely unpretentious but rather satisfying!

Don El Paso made it known that tacos for beef mince, soft shell for chicken. I’d not cross him if I were you. One of the sacrifices I've had to make for the Don is to develop a way of eating corn tacos without losing too many fillings. Don't overfill them and eat them all in one go, you stand a chance. Get greedy or try to put on down on the plate it's all over.
