I thought the same thing actually. I've got all that and it sounds good.

Dunno, but I'm using a normal onion.

Come to think of it, I don't think I've ever peeled a courgette(/corvette!) before.

Bombay onion is a generic term for an onion imported from India. They're pinkish. In between a white onion and red onion. Flavour is different to white or red onion (unsurprisingly). Probably a softer flavour.

Readily available from your South Asian grocery store. Slightly more expensive than white onion but per onion we are talking a few pence difference. Price can go up really high sometimes if there are supply problems.

Let us know how the turai ki subzi gang get on! Turai is courgette in Hindi smile

Does anyone like or had dal makhani or black dal? We hunted high and low for a decent recipe and found the Rick stein one to be the closest to being authentic. It’s so tasty.

Oil in wok.
Paste in wok
Onions, garlic ginger, fresh coriander
Few mins to get going

Coconut milk in, let it simmer and reduce a bit.

Chicken in...let it poach

Dump in some green veg.

You'll get a decent green curry with that as a base method.

I made this last night, but with a European onion rather than an Indian one! I didn't mash it down completely as I wanted texture rather than mush, and I could have added used more chilli, but it was tasty. I shall finish the remainder of it tonight with spicy salmon I think.

I got a bit obsessed with doing BIR curry a while ago - its a bit of a faff but worth the effort.

I found this chaps channel quite good, you can almost cook realtime with him for some dishes which helps with process and timing.
