Thanks, I went for this, worked well.

Pre cooked 6 garlic breads (4 cheese, basically a blanco pizza, 2 just garlic oil because vegans)



Was quite good to just keep smashing out pizza with no interruptions, helps with technique. These will get warmed up tomorrow.
Basically I get a bit focussed when making pizza and if people are constantly arriving/saying hi/ putting their wet glass where I’m making dough/ getting in the way, I get a bit annoyed, which isn’t a good look for a host!

I found this dough really sticky. Put the ingredients in a post above. It was only 63% hydration but it was quite flat and sticky, prone to getting too thin. Maybe the green molino flour isn’t up for 2 day cold proof.

Also put 4 in the freezer for when I haven’t planned in advance.

Doing pizzas for 6 tonight, what's the best way to get my frozen dough balls ready for say 4pm? Bought from Great Balls of Flour.

I took them out the freezer yesterday and are now in individual proofing pots in the fridge. Leave there, or remove and let them warm to room temp?

I'd take them out at about noon and leave covered them out if direct sunlight until ready to use smile

This was my first attempt using sourdough and we loved it.

Tomato, mozzarella, pork, egg and rosemary

I had a go at making pita breads in my Ooni, they were easy to make and turned out well, and gave off that lovely smell of freshly baked bread..

I followed this recipe which ended up making about 15 x doughballes, most of which I have frozen (next time I'd reduce the quantities by half)




Compared to making pizzas, there's an awful amount of yeast and salt in that recipe, but I stuck to it..






Rolled out with a rolling pin..




Got the stone to 260C and launched the first one, It was reassuring to watch it puff out in the Ooni




I made a Kellybab on the Weber..




The kebabs turned out great, just like eating fresh bread which I guess I was..

Good effort on the pittas!





First time the Ooni has been fired up in 2024. Think I need I start unbagging the dough balls after defrosting them and let them sit for an hour or so before cooking? These were defrosted this morning, released from bag and spread out for cooking within minutes.

Looking for advice.

I want to buy a self assembly Stone Pizza Oven and am visiting the UK next week and could bring it back on my trailer — any ideas ?

Ordered one this morning actually. Been on my list for a while. Replacing an old uuni ( original) but got tired of the faff with the pellets .

Any suggestions for cheap tubs to defrost/proof individual doughballs in? I was using the round 760ml Sistema ones before which were £3 for 4 however they have gone up in price to £12 for 4 which is bonkers

Your biggest issue will be finding somewhere that has it in stock and is in a reasonably driving distance depending on where you are coming from and visiting in the UK

How long would you say a frozen doughball can safely be kept in a fridge? I took some out from the freezer on Friday night and left them in the fridge to defrost. Didn’t get a chance to use them over the weekend and wondering if they will still be fine to use tomorrow night

These from B&M are good, and only £3.50 per pack of 6. I use them for my dough balls

Should be alright I reckon, fridge temps are cold enough that they don’t proof too much.

They might be a bit weaker, so maybe go a bit more gently than usual when stretching.

Had some leftover pork belly offcuts in the freezer from bao buns a few weeks back, so put them on a pizza with Asian firecracker sauce.
Worked well.
