Mustang new owner question

Mrs Ozone is on the verge of ordering herself a 2017 GT Shadow Edition. She wants some instruction on using the Line Lock and Launch control.
The dealer can't recommend anyone to do this other than trying Paul Swift which seems to be more exhibition driving.
She doesn't want to do a track day at this stage, just safely find out how to use the 'track only' functions even if it's only once, does anyone know of anywhere that does this?

I would personally just use a big empty car park/industrial estate area on a quiet weekend morning.
