Just completed a few of these, the beauty is you get the payment for the mission and the individual pirate bounties which are often large, up to around a quarter mil for one! My ranking has steadily gone up too which is nice as they are often Dangerous/Deadly
Also, and this is a quandary for me, if you attack one of them, the others just carry on on their merry way. Makes picking them off a bit easier...

The Moebius PVE only private group is a good alternative where you will still see the occasional person in game but PVP is forbidden. Having system chat open in the Comms panel means you see chat from both open and your instance too which is cool sometimes.
In theory a great idea and means you can group play - but it's a large galaxy out there and I've rarely met another player. It does happen and once in a blue moon there is something organised - worth joining IMHO though the forum is generally quiet aside from the mandatory Hi I'm a new member posts, but it does have some good info. FB group is not too bad. There's Hutton Orbital Truckers as well.Moebius is very useful at times and has tens of thousands on players subbed*
But unless you're on specific expedition like Distant Worlds, Small Worlds, etc then it will be rare to see someone else.
Away from Shinrata, Community Goals and other popular systems it'll be often days between seeing people in Open. The galaxy, like you said is BIG.
Elite has really got itself into this silly Open/Private/Solo situation by failing to deal with Crime and Punishment effectively. Players who "Want to be the bad guys" are fine in theory, but it's not at all balanced that someone with huge bounties can still access High Security systems/stations with impunity.
Minor rant over. I still recommend Open to everyone with some caveats but you do have to deal with the occasional douchenozzle. Certainly I wouldn't risk it returning with a hold full of exploration data. But I've also had the most fun bumping into random people in the middle of nowhere too.
It was really very cool a few weeks ago to play my Alt account in the starter systems with dozens and dozens of players visible everywhere. Flying in supercruise there were player ships buzzing all over the place it felt very alive.

Just completed a fat job at home station, go out and murder 72 of the opposing ships and earn 40 million plus 5 Exquisite focus crystals.

Must have been the shortest engagement of the game and cost me 9 million in insurance costs...

How much engineering have you done and what ship? I often found in the early days it was best to target smaller ships or pick ships already being targeted by the friendly side. Less trips back to the station to repair and get ammo (if needed) and quicker to get the numbers up. However

Bit of useless trivia seeing as Oilchange had a similar conflict zone ship loss to me once got me thinking. I have only ever had 5 ship re-buys in ED since 2015. 5 insurance claims costing 2,168,291 credits in total according to Inara.
1) Sidewinder early 2015, NPC destroyed it
2) Type 6, 2nd cargo run around Mid-2015, NPC destroyed
3) Asp Explorer 2017, heavy G landing/crashing
4) Vulture early 2018, Conflict zone death
5) Viper Mk III early 2018, throw-away toy for skimmer mission gold rush and got lazy, left my PC with the game active Viper stationary above skimmer target area for a few minutes and it got destroyed by a parked NPC ship with turrets.

It's a Fer de Lance with 'some' engineering.Also have a Cobra for some of the surface scavenging and long range stuff, it's what got me to Elite exploring and I have a big soft spot for it.
I was a bit arrogant to think I could wander into the zone and do as I please, probably needed the knock back.
I do get involved with partly shot up ships but I think it won't go your way unless you take down a few on your own, I find targetting parts of their ships helps a lot too. I also find that when the messages come in that the skirmish is nearing the end they are a lot easier but you have to be quick as they start to beam out.

Ouch. I did something very similar last night. Just survived, with hull integrity sub 10%. Only issue is I'm about 16,000 ly from home, at the top end of the Norma Expanse. Looks like I'm heading back early and will have to be very careful!Went into scan and check out a biological life form on a planet which, unbeknown to me (my fault for not checking) had 8.0g. I managed to hit the surface at a few thousand KMS. The thing is, I hit reverse thrust, pulled up but the reverse thrust thrusted me into the ground.
If anyone finds the wreckage of my ship somewhere in Temple, do me a favour and see if you can find my car keys.
