As joyrider said you might not be able to start the missions due to your low level.
You start any 'activity' like a race, mission, deathmatch etc by going options > online > start job > rockstar created > missions (or whatever). For the double pay out ones just select the mission and on the right the little picture has x2 $ and x2 RP in the top right corner.
Be aware that some missions require more than 1 player - it says this on the right when in the menu.
You can throw me a friend request too if you like (Crafty77). I'm a million bucks up since Tuesday, wondering if I can do 3m by Monday!

I'd figured out races by driving to the races on the map, but wasn't sure about the Missions. I'm Level 10, but don't know what level I need to get to.
Is it best to just go through the Lamar missions or start doing deathmatch etc?
The Lamar missions can be a bit tricky, especially the last one. From memory they won't pay that much, so I'd stick to the Lester contact missions until Tuesday ! Probably best to get one of us to run through the Larmar missions with you if you want to do them at some point.
I forget exactly how to do it, but you can make the missions appear on the map so you can drive to them, they did used to be there but there was so much stuff appearing it was a mess, so they switched some stuff off. But you can get to everything through the online > start job menu.

Best thing to do is join Crafty, or myself (Joyrider1) or any of the other crew members to do the double money/RP missions this week - you’ll soon level up and get plenty of cash, plus you’ll get a really good understanding of the game whilst doing so...I should be on later so don’t mind hosting some missions....Don’t bother with deathmatches unless you enjoy doing them, they’re a tiny part of this game
Just to make it more helpful, here's another take - deathmatches can be very good at teaching you weapon use, awareness and general hiding techniques, but as long as you're playing Rockstar made deathmatches (not this parkour nonsense you probably get lots of invites to) with custom weapons off so you're on a level field.
