You'd have to chop out the brace between the shocks to get it in I think (it's a few inches longer than the v6) but it ought to fit easily enough if you don't mind it sounding horribly dull.
As for the Jag v8 I think it's the sort of engine you'd only consider fitting because you had one sitting around. IIRC there's a manual box that goes on it (x type diesel?) but you'd probably have to modify the chassis a fair bit to get a quad cam v8 in there and fit an exhaust in. That's not to say it's especially impossible but if you're going to that sort of effort I'd be surprised if that was the engine you chose.
I think the mazda/ford/jag v6 is the sensibleish option if you want more power in a v6 S. A bigger rover is the sensible choice in the v8
