Nice eating halfway between Manchester and Leeds? (M62)

Hi guys, I've arranged to meet someone who'd willing to meet me halfway between Manchester and Leeds.

I travel the M62 a lot and sometimes, when crossing Saddleworth moor I see some nice villages/pubs off to the right and left but I've never explored around there.

Does anyone have a recommendation where to get a nice meal and a drink during the day and how to get there (should ideally not be too far from the M62) instead of meeting at the services
