Does anyone have any other ideas?
Rear trailing arm bushes, lower control arm bushes, upper control arm bushes, there are many bushes in there not to mention the obvious that has also been pointed out..... Loose stuff left in the boot, fallen inside a bit of trim etc.

Ihad a similar issue on my car (not a volvo) but looks like its a similar set up, there is an arm thats shaped like a banana that mounts to the chassis under the boot, and the bush needed replacing.

Hopefully the below link works to the part.

Thanks for the suggestions everyone.

So far I have:
Emptied boot and tool kit
Folded seats down
Pulled back trim on the sides of the boot to check for loose bits
Exhaust is all good and all bushes checked multiple times

One thing I didn't mention is when I'm sjtting in the passenger seat and someone else is driving its vitrually silent from the passenger seat. When me and the missus switch over to the drivers seat the knocking is more audible to whoever is driving or sitting in the back but the passenger barely hears it.... Its so strange

That isn't strange at all, it is quite normal that suspension noises differ with different weight distribution in the car.

Did you check the wheel nuts?

I have checked the wheel nuts which are fine but haven't checked the battery (the noise is at the rear i'm sure of it but I know sound can travel in weird ways so will check it anyway)

it does also do it at crawling speed! coming out of a car park yesterday, hit the smallest of bumps at about 5 mph and I heard it frown but going over speed humps it doesn't do it so it seems like small, short ripply (if that's even a word) type bumps that causes it to knock.
