The issue with vans (especially camper converted ones) is the weight. I doubt a space saver would have sufficient load rating for the rear of a loaded van (unless it was designed for a van).
I have a full size spare hung under the rear of my Renault based camper, it is quite easy to get out.
Undo the big nut just inside the rear doors, the tray drops and then reach under and unhook. No need to actually go under the van.
Getting the wheel back in and lifted is more difficult but no need to do that at the roadside.
