Southampton's Ocean Village wouldn't be too bad a commute to London, although its 1 hour 16 minute train journey could be better as I can just about beat that from the Midlands. There is the New Forest down the road if you want to do something outdoors that doesn't involve boats.
I’m in this dilemma at present, bought a holiday place in Ventnor 3 years ago. Live in South Oxfordshire Chilterns. IOW beats it hands down, I love the riding down there such variety straight out the house back Home edge of Chilterns is just boring in comparison. Ventnor also has 6 restaurants in walking distance that are great for the evenings, have to go mega expensive Michelin star places round here to eat as well. Problem is work,if you can doncurrent from Home move there if not probably best you don’t as employment is rubbish. My plan is few more years saving and building pension pot and saving to buy a bigger house there then go and rent my house in Oxfordshire and live off the rent.

Poole is supposed to be in its own little microclimate for some reason - I've not been there but it's supposed to be a nice place to live. Lovely countryside to the North and the New Forest not too far away to the North East. 2h direct train from Waterloo.
Pangbourne gets my vote; I lived there for about 3 years and it is a truly beautiful place. The Butcher there makes the best pies in the UK too!

Very happy here in Central Algarve in Portugal now though, 300 days of Sun a year on average. Wonderful climate for cycling.
