Samples for the first 2 casks are ready for me to collect, I need to get up to Portsoy soon (have sold some whisky to them for a change!)

Still got the last octaves to fill too...

I would like to be around for the filling of a cask but I just arrived back in Germany and will be here a little while now.

If my other casks are anything to go on - I'm sure the samples will be interesting - and the differences between the PX cask and normal will be more than evident.

My own casks even after a year or so are looking interesting with lovely colours and flavours to them.

The rum octaves still haven't arrived frown

However, we have the option of switching to Amontillado sherry.

Your thoughts?

Seriously though, if there is a space on a sherry cask I would be interested.

If someone wanted a rum, but would drop out if it moves to sherry, then I'd take their place.

I love this.

It's a real credit to PH's that complete stangers can arrange something like this over the internet on a forum and have no worries how legit it is.

Seriously, this rum thing has been a bit of a disaster, happy to refund anyone who would like to pull out or equally happy to change to amontillado (which we can fill in the next couple of weeks). Or, of course, we could add an Amontillado cask too.

If you go sherry, and someone with rum wants to drop out, I'm happy to take their place (looks like £70 at the table) - but I'd rather it was brokered / arranged by you. smile

3 years might actually be enough for the bourbon. Sherry I think will do well to mature for longer.

The 3 and a bit year old bourbon barrel (Dickel IIRC) that has been finished in an octave is absolutely gorgeous.
