I decided to do sushi today for the first time.
The recipe which needed Mirin, rice wine and castor sugar soon turned into vinegar, normal sugar and a bit of salt once I had looked into the larder.Found some tuna and salmon and crab sticks in the freezer, no point splashing out if it was going to be a complete disaster. Let's spend £4.37p rather than £20
For a first try I found the rice sticky, so much so that it is sticking to everything apart from itself, see below
Got a spicy home grown chili omelette for tea on the left hand side.
I am not sure how to clump it together into a nice shape. I was doing that with rice sticking my eyelids together and the dog going out looking like covered in dandruff/sugar puffs. So it can stick ( everything to anything) but not to each other in a pleasing ying and yang rice ovoid. Any clues from sushi rice maestros?
There then followed the following conversation with my wife / female Kamikaze food test pilot
Me
"'I'm getting there"
Her
" Have you cooked the fish yet?"
Me
"You don't cook sushi fish"
Her " Unless you have really really fresh fish it does not work!"
Me "When have you ever had really fresh fish like that?"
Her
"Wen we went to Turkey they had a sushi bar at the hotel restaurant"
Does a crabstick out of the freezer count as really fresh fish? Or even fish? To cut a long story short she did not eat it all, said "apart from the rice and the "fish" it was ok" in summary.
I am going to make the left overs into something epic. Stay tuned.
