I’m sorry - it’s not overly exciting I’m afraid!

7lbs of trimmed filet. Sliced into 1 1/2” steaks.

Kosher salt applied 24 hours ahead of time.

Grilled on medium-low for 7 mins a side.

Let rest for as long as we could resist (about 5 mins).

Consume. And regret not grilling up the other 3 lbs I have in the fridge.

That is some of it but also there is not a huge demand for it in SA. Meat in general is cheap in SA compared to the UK but the demand curve is very different in terms of what is popular and what you can charge more money for. The south african diet is very different outside of the small white population.

If you feed your captives fillet steak I expect you don't struggle for applicants.

Absolutely. Thats party what i meant by "outside of the small white population". I have just checked the butchers I use when im in Johannesburg and its 240 rand a kilo which is £11. The average salary is just over R20000 a month which, as said is about £1000. That average is massively skewed by the professional population though. The average "blue collar" worker earns about £200 a month and the minimum wage is £1 an hour

Another thing about meat in South Africa is the quality.

The last time we were there we had one of the best restaurant experiences ever at the Fat Butcher in Stellenbosch.

The meat in SA certainly is generally very tasty. Both the traditional Western animals as well as the exotics. However that's no good to me when I'm not in SA hehe

It’s a shame that the vast majority of saffas take that great quality meat and slather it in braai salt before burning it to a crisp
