That's a nice looking loaf. Only way I can get an even rise like that is a really slow ferment and long kneeding so I tend to do a quick and dirty loaf which is acceptable but not like your pics.
I just call mine "rustic" and pretend its how its supposed to be charge extra.

Not made a fougasse since the day I sold up
Pics from a Sunday baking session before the football. (which turned into a Monday eating session due to lack of setting time)
Ingredients gathered.
Making sweet biscuit pastry.
Cut out biscuit bases and blind back some tart bases.
Make creme patissiere.
Make lemon parfait.
Checking if the parfait is set......nope! Overnight in the fridge it is.
Make up some Italian meringue.
Final assembly......
Fruit tarts:

I once had a bake off with my daughter on a victoria sponge. My victoria sponges were always so flat they looked like poppadoms with strawberry and cream in the middle. One day my sponge rose. I rushed to get my camera and when I got back my fecking dog had nibbled it.

superb! we make bread at home in a breadmaker, but i'd love to get into properly baking bread/making sourdough etc. seems like a faff, those loaves look amazing though. love the little people crawling into the pot, what are they all about?

300 gm mixed dried fruit50 gm dried cranberries
115 gm butter or margarine
250 ml boiling water
150 gm caster sugar or muscovado (optional but don't bother unless you like really sweet stuff)
That all goes in a saucepan and heat through while stirring until the butter is melted. The idea is for the fruit to swell. When it comes to the boil leave it all to cool.
When it's cold you can add the remaining ingredients,
2 beaten eggs
250 gm self raising flour
1 tsp mixed spice
Eggs first and stirred in. Then add the flour and the mixed spice. Place the mixture in a well greased loaf tin (ours is 210mm by 110mm internal) and cook for an hour at 175 C, then take it out and test it by pushing a thin knife into the middle. If it comes out clean it's cooked. Alternatively you can tap the top and listen, if it sounds hollow then that's good.If it's not cooked enough then give it a bit longer in the oven.
