Tickle was referring to Chinnyman who mentioned he rolls his dough out.

My 1kg bags of Nuvola are pretty much finished. Trying to work out what to try next or if I should just get some more of the same. Always worked well for me on a 24h room temp

Lastly, the pizzaapp reccomends 1g of active yeast for 1kg flour? I'm doing it now for tonight?

Check the RT temperature you have it set to in the app and the RT leavening time. Only way I can get it to show the same as you is 10h at 22C which seems a tad high for this time of year unless your heating is on!

Your likely more like 2g from the quantity but as said check pizza app. 62% hydration is a good start, 3% salt and a 260g ball.

Type out how much flour, water, yeast and salt you used and the method. I’m sure one of the gurus on here can point out where it went wrong.

I do my dough by hand with a plastic dough scraper, I ended up trying a few different methods before finding one that works for me and I’ve stuck with it

700g flour
420 water.

My plan was to hand knead it but I thought I would just mix it together in the kitchen aid.
Feels dry but also a tad dense...

You must have got your measures wrong. That dough is way under hydrated, mate

That’s really odd if you’ve matched that exactly there should be dough although your ball size is tiny. I’d be looking around 240g. 14” I go for 300g.

I’d go for this:



Flour yeast and salt in the bowl then add water chuck in the stand mixer for 5-10min then ball up as 1 for 5 hours at room temp. Then ball into 6 for 3 hours and serve.

It just felt too little water to make dough.

I'm using dry active instant yeast, is that a problem.

Sounds like your scales are out as the measurements from the app seem fine

The water measurement is in grams not ml?

Probably where I went wrong then

Nope, 1 gram of water = 1ml of water.

Thanks all. The scales were way off.
Should have clocked in really. Using a 1kg bag of flour for a 700g recipe.😅😅
