The word overboard isn't appropriate for your situation, we need a new word to describe just how overboard you have gone I may have gone a little overboard... not strictly for proofing dough but I'm sure that will be a secondary use.

Yes I think thats correct. It takes a good solid 2hours to heat up. To be honest, with the exception of the fantastic drama involved with a wood fired oven which I do love, I do prefer the convenience of my ooni gas one. thebraketester said:

The stone needs to get to around 430C in the Karu and I've seen it in excess of 500C with wood where I'd stacked the wood up and wasn't watching closely, same for gas. I've struggled with charcoal though, I've tried charcoal and a wood/charcoal mix with poor results but it seems to work for others.Gas does heat up quicker, it's cleaner and you have additional time as you're not having to add wood etc.

I'f have thought it was possible to go higher with gas, but it would probably take a while.

Yeah, I love using wood. Was going to get one of those Morso ovens, then forgot my previous desire and bought an Igneus instead. It can hit 500c + air temp in minutes from the kindling, but I give it more time to heat up the stone and cook at a lower air temp anyway - it's not like I'm using an outdoor pizza oven because I'm in a hurry. Wood really packs a punch on the heat front!The small gas jobs are certainly cheaper, so an entirely different market.

35 mins? No idea how you are doing that unless you are using petrol. To be fair I have only used that oven twice so my fire making skills probably need some work. The issue with the Morso Forno is that it is not a dedicated Pizza Oven and not insulated, so you lose heat quickly compared to a normal Pizza oven. I use an infra red thermometer to check the temp and if making multiple Pizzas, I start cooking them on the outside on some non stick bbq mats stuck to it with magnets (Tip I got from Manna cooking school).
I love the Morso because it is very versatile and looks very cool, accessories are not cheap but I have the door and smoker top.
