So in the interest of open debate, please declare how many portions of chips you get from a 25kg bag of spuds. I'm sure HMRC will be interested to know. Actually they know already but extra data always helps.

So when that figure is declared people can work out the sums.

Just for the record, using the typical chip shop serving, then a 25 kg bag produces around 30-33 servings. Suggest it's a greater number of servings in a restaurant, burger or otherwise, but will vary vaguely. The OP complained, iirc, about a meagre serving of chips in a poncy flowerpot or similar, where the portion is meagre. Frankly he has a point, I know portion control is almost everything in that business, but those tactics are just mean.

So come on, show your figures.
I have no idea but obviously you are in the chip shop business so will not argue!

What grade flour ? . the OP for this comment is referring to nice quality places . so a higher grade ingredient ? Talking of which , Franca Manca is bloody good for a nice Pizza . sour dough bases !

You have to bear in mind that the prison service has free or nearly free labour.

One place I worked at supplied ready meals to HMP#s, they were OK. Cheap and cheerful, but wholesome enough. Stuff like liver and onions with sauted potatoes and frozen mixed veg. Certainly if you went inside I don't think that you'd find that sort of catering your biggest concern. I think they paid between 80p and 90p per portion.

I can tell you the cost to a major airline for a 'meal' such as a hot lunch or dinner, pudding and your snack. This is back in 1998 though. AUD 3.50

my sister had a very successful pizza and pasta restaurant. cooking everything from raw ingredients and not using ready made sauces , the cost was 65p. this is going back a couple of years.

I can't believe i'm still involved in this thread hehe but I'm invested now! I have consulted to all sorts of businesses including Flour Milling giants, Unilever, dairy farming, hotels. All I'm saying guys is 39p is not correct. Not by a long way. When I was single we'd order in Pizza Go-Go. It was massive but pretty rank. the cheese was terrible. I can imagine they buy that in for £3 a kg. It still has dairy in it. How much cheese is on an extra large pizza. I know its at least 150g. That is 45p in cheese. The base can be made for just under 15p. ham/pepperoni. It isn't 10p. Bulk flour can be had for about 60p a kg. you need 150g of flour yeast, salt and sugar and warm water

i hope this settles it- from 2011. This is a Dominos scale business. My figures above were common sense accountant style. Surprisingly bang on give or take. Im sure someone will come back but but but the 39p one is smaller. They are buying ingredients at MUCH higher prices than Dominos smile

No I'm not, it's publicly available info, someone linked the calculations after my post.

Incidentally wholesale price for a 25kg sack of spuds was £6 in Glasgow two days ago.

That's about right. They will get very cheap in another month or two, but only for last year's crop, and once the new season are in last year's crop is getting rather elderly. Those that aren't yet growing aren't far off going rotten, at which point they go off to feed farm animals.

Frying quality Marris Piper is £11 per 25kg.

£10.23 for 25kg down in Devon.

But they are locally grown and delivered in very nice shiny new vans (paid for with expensive potatoes!)

This place is getting good reviews near me. It has the obligatory craft beer selection, trendy hipster location and general vibe and I've no doubt it will come with a hefty price tag (although I've not been).

The big chains all seem to do pretty OK burger and chips but none of them are worth paying over £10 for. 5 guys and Byron seem to be the worst culprits. Not sure why Byron gets so much praise. It's nice but not silly money nice.

Here is a break down of a £10 burger and chips in terms of cost to the retailer.

Chips = 40p tops
Lettuce/tomatos/coleslaw etc = 30p tops
Bun = 40p tops
Meat = £1-£3 tops

Thats a lot of profit for such low cost ingredients.

and yet a dominos pizza is about the same but cost nearly £20!

Well that's just stating the obvious. It still doesn't excuse the fact how much profit is extracted from such low cost ingredients.
