Folks, I happened to be driving past one of my favourite butchers on Wednesday. Took the opportunity to pop in and buy a nice bit of rib eye. Put it in the fridge ready for Friday night lick

Typically, I received a JustEat voucher today and it expires on Friday night so my plans have changed. Got me thinking, how long would you leave a steak, cut from a joint on Wednesday, in the fridge until you think its quality/flavour would start to suffer?

I'm not on about 'best/use before' stuff, I know about that. But will it be worse on Saturday than Wednesday? Does storing in a fridge change steak in that way?

I know it's in a fridge, I was just wondering if after it's cut or even before, it starts to loose quality and flavour and is there a time scale?

I did have a rib eye a few months ago, purchased from a different butcher that was left from Wed to Sat in the fridge and in all honesty it was nasty. Didn't smell overly dodgy but the taste wasn't there, I've not been back to the same butcher mind you...

We "age" beef by leaving it in a fridge for 30 days, and we pay more for it. Ok, it's in slightly bigger lumps and slightly lower temperature, but it is basically sat in a fridge. With mold on. A few more days in your fridge won't "degrade" it. It will age it a bit more. It might discolour a little.

Let it get to room temperature for a few hours before cooking it. Smell it. But it will probably be fine to eat for a week.

I didn't know it was aged in a fridge, but thinking about it I suppose that's the only way to age it. My fridge is set to +1, I like cold drinks.

What grumbleoak said, leave it out to come up to room temperature. If it looks and smells alright then have at it.

There was never any doubt about me eating it thumbup

Just want it to be at its best but on the other hand I don't want to forgo a 15% docount at JustEat smile

When it starts to go brown it's started turning, it's then still edible, but the flavour will start to change.
Buy yourself a freezer maybe?

Take it out of the packaging and put on kitchen towel on a plate. It will start to dry out. Should be ok for around a week like this. If you leave it wrapped up it will begin to rot

We age beef at much lower temperatures than a domestic fridge.
